We haven't heard from him in a while, but he's most likely going to have some role to play in this arc.
He might not be that strong, but his utility is extremely high and can easily turn the tides in the war.
I feel like his plotline can play out in a few ways:
1) Saving the people of the flower capital from getting crushed. For example if Oda decides to further drag out the arc, but he wants to create a sense of tension then he could just drop Onigashima on the capital and end the act. But it's just a fakeout because Caribou could just consume all the people and make a run for it.
2) Play a role in the plan that Tama is devising. No clue what it is, but something is definitely happening there and Caribou could be an easy way to bring in reinforcements or some other plot device.
3) Disappear the entire arc and reappear at the end to do something scummy with his info about the ancient weapons (Shirahoshi).
I feel like I'm more partial to the first 2 options because of Luffy's willingness to help out Caribou. Since Oda always emphasizes Luffy's ability to read people's character, I feel like he's unlikely to make someone betray Luffy.
Any thoughts on what else Caribou could be up to?
