In Film Red, we were shown a similar "demonic" entity to the Gorosei, Tot Musica. Similar to the Gorosei, Tot Musica had a gimmick which rendered him invincible: it manifested in both the real world and in Uta's dimension, so the only way you could actually hurt it would be via simultaneously attacking it at the same time in both dimensions. I think a similar concept is at play with the elders.
We see the gorosei are all connected to each other, able to telepathically converse with each other and even summon each other. Would it be a surprise if their other shared power, regeneration, came because of a connection? In order to hurt the Gorosei, you have to launch a simultaneous series of attacks (or one giant attack) that hurts all five of them at once. Otherwise, they'll just regenerate endlessly.
