We all remember that scene during the flash back, when, after they returned from Laugh Tale and dismantling the crew, Roger and Shanks are talking about something we don't know about that made shanks cry.
I actually had a little theory about what they were talking about... I think Roger asked Shanks to wait for "that person" in about 20 years, and to give him the hito hito no mi model Nika, so Joy Boy could return.
I think he asked Shanks specifically first cause he trusts him (enough to have given him his hat) and also because since "this person" was supposed to appear in about 20 years if i remember it right, Shanks would be of age to find him by the time coming.

Then, Shanks would ask him why him, why wouldn't HE wait for "this person" himself, and Roger would tell him that he won't be able to since he's going to die real soon (making Shanks cry)

So that would be the reason why Shanks stole the fruit from the WG! I was also thinking maybe he found out Roger had a son raised by Garp and eventually though the one he's searching for could be him, and so that's why he ended up in Fusha with the fruit he stole so many times ago!
When Luffy ended up eating the fruit, he thought his long life mission was going to be ruin (also to protect Luffy he didn't tell him the real name of the fruit) but then, eventually thought maybe it was fate or something, and that he could put his bet on Luffy after all, and so comes the straw hat and the promise!
