Eh..
I'll be honest, I was never a huge fan of the anime's choreography and what not.
But I think Luffy vs Lucci was the best fight. Or Luffy vs Enel. I don't know.
Compared to the eye-raping color spam in Wano? it wasn't much.

WCI:

Wano:
Also they just randomly started making Luffy fly in base and Kaido fly in Hybrid form and clash with huge aura beams surrounding them in the sky like Dragon Ball. Really seems like they got the Dragon Ball Super guys specifically on the team for Wano.

I still don't know what the actual fuck is happening in this scene

The choreography is so fucked up it doesn't even look like a fight anymore just some random rapid movements

Luffy vs katakuri by far tbh. I love most of the fights and fights like luffy vs Lucci and luffy vs kaido are amazing. But no character got so fleshed out during a fight other then katakuri

Neither of those fights were the best animated by any stretch of the imagination.

I'd say that its tough to consider what constitutes the best animation fight.

Luffy vs Katakuri is still a decently impressive fight(even outside of the Snakeman episode, it was still decently visually consistent), but I think most of the major battles in Wano easily surpass it in terms of animation in both highlights and visual consistency.

In all honesty, it might actually be one of the shorter fights that is contender for "best animated". Something like Luffy vs Lucci, Luffy vs Kizaru or Zoro vs Lucci, which only last or appear across a few episodes and are consistent in every appearance.

In saying that, its a bit disingenuous for longer fights which were generally consistent but had one or two mediocre episodes animation wise.

For example, I think Luffy gear 5th vs Snakeman is a really great contender, it definitely has some of the best highlights in the entire series, but 1073 is a bit of a lull in the action, even though that episode is sandwiched between 1072 and 1074, each of which having some of the best animated action in the series.

Oh yeah, as for best animated Pre-Wano/WCI fights(because Katakuri obviously takes everything pre-wano), I actually think Vergo vs Smoker is a really good contender. Despite being rough around the edges in a few places, episode 616, which is where the fight receives its primary focus, is still a really awesome episode, and has tons of great animation highlights.

This one is the only scene here that has real readability problems and I'd argue thats becausse the transition between Luffy exitting the other side of the mountain can be bit hard to spot when its not pointed out, as well as him bouncing upwards.

The other scenes are perfectly readable.
I don't see anything hard to follow in this scene.
This scene is also very readable. It literally slows down at the most pivotal moment before the point of impact to make clear whats happening.

I don't think you have any idea what you are talking about...

Luffy vs Croc in the tomb is underrated
I'd actually say that outside of the last episode in 126, its not very well adapted.

The first and second rounds are probably more consistent, due to being a single episode each pretty much.

Episode 121 was bad and failed to deliver on an awesome spread of Luffy landing his first punch on Crocodile, but episode 122 had some of the best staff in the series at the time on it and is a significantly stronger episode.

The battle in the tomb is also pretty stiff for the most part, but 126, the finale for the fight holds up really well. It begins the trend of Katsumi ishizuka doing the finishers for the next 2 arcs after this(animating both Enel and Lucci's defeat), and even showcases some really nice modern effects animation when Crocodile tries to bring the tomb down.
