When Fisher Tiger and the Revolutionary Army attacked Mary Geoise, they were absent. They didn't do anything until they received orders from Gorosei and Imu.

They didn't care that the Revolution army freed the slaves as long as they weren't affected themselves. Now they are affected because the God Knights are human and need food.

I don’t think god knights are used for fighting or allowed to fight in public. They’re meant to be hidden/secret group like CIA wouldn’t attack a terriost in White House. That’s FBI and police job.
But also oda could’ve created them very recently

Wanna say to all the people claiming "The HK weren't even planned yet!", they probably were.
Oda had drafts of Shanks being a knight since even before the series began. And Shamrock or Garling were hinted to have given Whitebeard his scars as well.
I think he always had the HK in his mind, though he obviously tweaked the concept a bit over time (hence why Shamrock is a knight and not Shanks)

Inside the story answer: Because Fisher Tiger is that guy! We have now to consider him stronger than how we used to consider him. Because some Holy Knight probably fought with him,but he managed to,if not defeat them,at least keeping them busy enough to leave the slaves run away,and then he managed to run away himself.

He got old. Fisher Tiger didnt need to defeat them,but just to create enough chaos to excape and to leave people excape. Kinda like Jinbei did against Big Mom in Whole Cake or like he did in Marineford to excape with Luffy
