Luffy is a CoC specialist, Zoro is not. Luffy has been actively using CoC for 400 chapters longer than Zoro, and Kaido still thought it unthinkable that Luffy would be able to use adv CoC...

Luffy is a haki genius and has internal destruction haki, which Zoro doesn't, despite being a CoA specialist, there is skill transfer in being able to use internal destruction CoA to being able to learn CoC coating...

Luffy had to be hit by adv CoC three times for his haki genius to kick in. Zoro has been hit once, indirectly, by adv CoC.
And zoro still used it first. Cry more.
 
The thing is here, is that Yamato has been shackled to Wano for over 20 years without being able to leave because of her father. This isn't some instance where she has been free to come and go from Wano as she pleases. The Country has been her prison for over 20 years. Oden broke the rules of the Country and left of his own accord, where as Yamato was forced to stay in the Country, unable to leave because of her father. She's been desiring that freedom, and being able to sail the open seas for over 20 years, yet unable to.

One Piece is all about breaking oppression, and symbolizing freedom. Wano opening it's borders is a step in that direction for not only the citizens, but Kaido being defeated is a step in that direction for Yamato. It'd be a convoluted twist if for some reason she decided to embrace this new role of some kind of guardian because of eating a devil fruit that thematically shackles her to that fate, and goes against one of the core concepts of the story. Freedom. Even if she makes that decision to stay, it would feel like that fate was set in stone the moment she ate that devil fruit.
Then why did Oda go out of his way to give Yamato the “Ooguchi no Makami” something that is considered to be the guardian deity of Wano? There are tons of other mythical DFs that Oda could've given her, yet he chose this one that has such massive significance to the nation, so there is just no way imo that there isn't going to be any larger significance to Yamato & that title. If Yamato beat Kaido for instance, then I reckon you could make argument that she's fulfilled her role as the guardian deity of Wano to an extent but we know that isn't gonna happen.

Once Kaido is defeated, Yamato would have gained her freedom so she'll be free to do anything at that point, even if it is to stay on Wano to protect it together with Momo. In the first place, Yamato has been imprisoned on "Onigashima" for 20 years not, Wano per say, so there is still a lot for her to see even if she doesn't set out to sea as soon as the battle with Kaido ends. She could always take her time with that she'll have the freedom to do so after the arc.
