Dude idk why but a lot of people don't have faith in Sanji's performance but I do, same with Zoro. I also want Zoro vs Kaidou again because IMO it's way, waaaaay more hype than Luffy vs Kaidou, mainly because it doesn't feel like a "destined" fight
It's different with Cook since he barely did shit in the New World before Onigashima. That's why his ability is still in doubt, but this is Oda's fault not Cook's.

Luffy vs Kaidou lost a lot of luster, imo, because Oda also blundered his own hype by making this fight practically a repeat of Luffy vs Katakuri (aka a war of attrition, although Katakuri did not fight anyone aside from Luffy in the mirror world). Basically, Luffy is just going to willpower his way through victory like he did against Kata, but the power gap between Luffy and Kaidou is too huge to not make this an asspull.

Oda already delivered this type of risk well in pre-TS in Luffy vs Crocodile and Luffy vs Enel. Crocodile and Enel had better AP and hax than Luffy, so Oda crafted Luffy's way to win by finding their specialized weakness (which is always fun to watch) instead of willpower.

The thing is, Oda instead crafted Kaido's specialized weakness in Zoro, who had to bail Luffy out of his own carelessness several times in Roof Piece instead of fully focusing on the fight, essentially making him a bodyguard despite his lethality. Add to it the fact that Zoro does not have destiny, reincarnation, and plot convenience backing him up, naturally his fight against anyone, let alone a top tier, is 100% going to be more thrilling than Luffy's.

The Road To Harmony
It's only the time for them to reach the capital. And Momo will anyways save it from falling with his cloud powers so it's not like the time limit even matters so much tbh.
Once they reach the capital, Kaido just has to stop making Onigashima float, and it will crash down quickly.

Plus Momo isn’t a variable Marco is aware of.
