Sanji have use weapons before as shown before. He probably know how to use sword based on his weapon fight on Wanze. His Haki and abilities is more than you think.

To be able to know how to use a knife =/= to be able to use a sword efficiently. Sanjis speciality is CoO not CoA. His CoA is considerably weaker than Zoros like Zoros CoO is worse than Sanjis. And imagine a Sanji using enma the first time when Zoro almost lost his arm him using enma the first time. And Zoro is way more experienced than Sanji in swordsmanship and CoA. The results would speak for themselves. You're straight up downplaying what Zoro accomplished with enma. He managed to control it in such short time of training. I bet not even Oden was able to do that.
