I don't understand how people can't see that Luffy had an infinitely tougher time with his opponent than Zoro and Sanji did with their opponents

If the gap between Luffy and Zoro is so similar to the gap between Lucci and Kaku, why was Lucci the pinnacle of an extreme diff fight for Luffy with him near death at the end, while Zoro vs Kaku was a high diff fight with him leaving EL with no serious injuries?
