Because Sanji and Zoro have "plots" built inside their fights.
Jinbe got a little extension on his fight due to the "Nika" shenanigan.
"Nami" vs Ulti took some chapters as well.
Robin had a little bit of stretch during her fight with the Wing thing and Black Maria trying to taunt her, etc, etc.
Franky vs Sasaki is the only one that was a pure fight due to them being enemies. No plot, no sad backstory for Sasaki, no nothing. Just the fight. Ended in 1.

Franky vs Sasaki was the most satisfying for me aside from Robin's but it was also due to me really enjoying Sasaki's DF and fighting style and seeing Franky Shogun go all out and use some kind of new energy sword slash move too.
But on the other hand, we had this great potential setup of Sasaki being connected to Kokoro and thus character development for Franky and Sasaki potentially. Oda really teased us with setting up Franky vs Sasaki too, it surely can't be coincidence factoring in Sasaki's design especially? Maybe a dropped plot point?
At least we're getting some great stuff with Zoro and Sanji and Sanji finally getting his proper 1v1 fight post TS, fighting a Yonko commander at that too, destroying the Raid Suit, getting a Diable Jambe upgrade and setting up to get a massive W finally! It's almost everything I could ask for from Oda for him, almost the perfect fight! Queen is such a great character and opponent for him, much like King and Zoro, so I am glad things worked out this way!
I just hope Toei really does flesh out the Flying 6 fights in the anime as they should ofc.
LMAO!
