Zoro's official role is Combatant (戦闘員), not Vice-Captain (副船長).

People in the manga have percieved Zoro as the VC then you have the color cover for 1031 which is enough evidence for me to say VC or the clear cut #2 of the crew

The monster trio will never change and so the gaps in between the M2 and the third man part of the trio

Jimbei has his spot on the crew now as a dependable, strong member but the Monster Trio remains, just as it has after every new recruit (not sure about how things will go down with Yamato but they'll balance out eventually). Nothing wrong with recognising Jimbei for his reputation and remarkable feats but Sanji's spot hasn't been disrupted.
