If he had never included anything about the Shimotsuki clan, nor hinted at Zoro's lineage in the SBS, Vivre Cards, etc, nor given Zoro subplots with the people of Wano, and all of that stuff...then that would be a relatively valid take although it would not excuse Oda in the slightest

No, Sanji, Doffy, Kata, Law all got their extended backstories and character moments, which is all that matters. Law defeated vergo and went against Doffy 2 vs 1 for the most of the fight.
