Perospero is of course based on Willy Wonka from Charlie and the Chocolate Factory

Flampe I believe is based on both Veruca Salt and Violet Beauregarde from Charlie and the Chocolate Factory

Kato is based on Jack Pumpkinhead from The Marvelous Land of Oz

Prim and Praline I believe is based on both Ursula and Ariel from The Little Mermaid

Brûlée is based on both the Evil Queen/Witch from Snow White and the Witch from Hansel and Gretel

Daifuku's Genie is of course based on the Genie from Aladdin

Mont-d'Or's appearance I believe is based on the Scarecrow from The Wonderful Wizard of Oz

Tamago is based on both Humpty Dumpty and the Jubjub bird from Through the Looking-Glass

Pekoms is based on both the Mock Turtle from Alice's Adventures in Wonderland and the Bandersnatch from Through the Looking-Glass

The Seducing Woods is based on Tulgey Wood from Alice's Adventures in Wonderland
