Once Zoro figures out King's weakness, King will stay in Fire mode and continue to ragdoll Zoro. CoC is the game changer because it didn't matter if King has Fire Mode on or not against CoC. Kaido said that dialogue before Luffy started using CoC.

Then there's no point in introducing "King of Hell". Zoro would have never defeated King without learning how to imbue his techniques with conqueror's and therefore reaffirming his kingly ambitions as the one who will truly never lose for them.
