Katakuri is a Logia for all practical purposes, he was even introduced as one in the Weekly release until it was changed in the Volume release because Mochi is manmade and not an element.
Oda didn't change a single thing about his powers, only the type was changed.
His Awakening is pretty much what Logia Awakening is gonna look like.
