My top 4 are One Piece (though more manga than anime as it has bad pacing), Attack on Titan, Full Metal Alchemist and old classic Cowboy Bepop. Berserk may be up there as well when I get back to it.

I may also a fan of western fantasy though ala Tolkien, Witcher etc.

yes these r all very good. i havent read berserk yet but also on my list

i actually didnt like witcher much. watched couple of season 1 episodes and it was kind of lame idk why ppl like it. maybe it gets good later but i didnt like the acting and main character
