Admirals beating Big Mom because of battle IQ is certainly possible. Law and Kid "beat" Big Mom through strategy and luck so the Admirals could do it even if they are weaker than her.

Admirals beating Luffy at full power is impossible because Luffy has shown that he can simply go back to GEAR 5 in the Kaido fight. Luffy fought Kizaru after he already used GEAR 5 twice in a day. And even then, he one-shotted Kizaru. Imagine if Luffy hadn't used GEAR 5 a single time before fighting Kizaru.
