If we're being technical here, Sanji rejected the "Warrior of Science" notion because he wants to sustain his humanity. He doesn't want to become a monster that can low/mid diff Queen according to his statements here.

So Sanji rejects greater power so he can stick with his principals. I think that's a worthy consideration.
