I think there's a reason why Luffy was able to restart his heart (and why he isn't doing it currently). He was able to restart his heart because of his heart itself. Luffy is suddenly recognizable as Nika when he transforms. His heartbeat turns into the drums of liberation. Luffy's personality even changes when he turns into Nika, but not completely, which is very strange. Zoan fruits have a will of their own. Luffy's heart, when Nika has Nika's rhythm, If the Nika fruit has a will of its own, then it is taking over part of Luffy's will.

You misunderstood the scene, when he went out of G5 he went back to his dying state, so he reactivated G5.

His sleeping for 7 days straight was because of the accumulated damage through the fight and dying lol.
