Luffy isn’t defeating Akainu
And he isn’t beating Teach either
Imu is the main antagonist of the story. He’s Akainu’s boss and if Teach gets his dream of joining Hachinosu into the WG, he’ll be Teach’s boss as well.
We’re in the final saga and there isn’t time for Luffy to beat all of them.
imo they all fall at the same time:

Double them and you get Akainu's unadulterated hatred towards lawless scum
Basically said, he is written as a Marine who cannot be defeated by any pirate because no matter who you are, Akainu's willpower will triumph
An exception will be made for the main character after 10 rounds of healing and running away

Or at least till we saw what Dolflamingo was capable of. It really was carried by Akainu as we were mostly dealing with fodder mooks till Dolflamingo

He was literally going against the vibe of the story at that point, you could hear the celebratory ost playing through the panels with Sengoku admitting defeat, but Akainu was like it's cute how they think they're getting away.
