For Documentaries I'd recommend BBC's Death of Yugoslavia (free on youtube iirc). Keep in mind that the subtitles are a bit of a rush job at some times.
As for books, Srebrenica: Record of a War Crime could be a good start. If you're looking strictly for literature I'd go with US, British, French, and maybe even Dutch authors since their soldiers were directly involved in post-war Balkans and thus their researchers had the easiest access and oportunity to write with the least amount of bias
