Nah, you just made it up.
For starters, I don't mind Sanji having hardening feats but he doesn't have any. We went through this stuff so many times, micro-analyzing pixels, etc, and Oda never bothered to show Sanji using hardening.
Even the anime made a better job at it when they actually showed Sanji using hardening against Daifuku.
So it's ironic when you're saying Katakuri is a mochi merchant - when his main strength comes from Haki - when Sanji's best PU was due to his lineage.
The only good thing is IJ which combines his flames with his exoskeleton and CoA.

Jinbei's is still the worst to me. Jinbei is just... not physically interesting enough to carry a Cover Series by himself with no dialogue.
