Because it makes no sense. Hes getting downed by a single base hit from Kaido just to shrug off Kaidos most powerful move like it was nothing.
Its inconsistent as hell and that rubs people the wrong way. It was not nearly as bad with Luffy vs Lucci since Lucci not once 1khoed Luffy before.
Getting up from almost anything is Luffys signature move. And it only works as long as it is believable. Vs Croc he brought water with him so the 2nd round would not be as devastating for him. Against Kaido? Magical Toon Force YOOOOO.

OP already covers so many things that Oda has started to give food powers with logia properties to characters.
Thinking of something novel that is not downright overpowered is really hard.

You remind me how Oda missed the opportunities to bring animal senses as part of Zoan powers, with the users having better vision, hearing, sense of smell or even a "sixth" sense in spider, bat and scorpion zoans for example.
