I wasn't again the idea of Sabo being one the strongest characters EOS, as he could be seen as Ace if Ace hadn't died and got to reach his potential. But he had a huge occasion to prove himself (Reverie) and he didn't do shit except doing cardio.
His best feats are mid diffing a pre-DF Burgess and being used as a sandbagging tool by who many would consider to be the weakest admiral

I feel that even outside powerscaling the narrative for Akainu vs Sabo is the same as Luffy vs Akainu but much weaker as it basically boil down to revenge for Ace, but Luffy was the one who had Ace killed before his eyes and got scarred after sacrificing years of his lifespan to rescue his brother, while Sabo learned about it in a newspaper days later.
Outside revenge I can't see any motivation as Sabo was shown to not care about the marine, his main enemies being the world nobles.
If we discard revenge, Sabo vs a holy knight or gorosei all make more sense character wise.
I won't say it can't happen, but based on what we know I'm not seeing it. If really Luffy vs Akainu is not happening, Dragon vs Akainu is more likely to me due to Dragon past as a marine and Akainu obsession with "Dragon's son" + them being from the same generation age wise
