Oda taking a 1-2 month break (where he’d probably only drop a handful of chapters anyway) isn’t going to prolong the manga that much

They aren’t even covering all of the Alabasta saga in season 2.
And I think they would milk it as much as they could.
If you just assume they do all pre skip sagas (not arcs so I assume some skipping/re-arranging) at the same pace it will probably be around 8 seasons.
With 2-3 months of Oda involvement per season that would be multiple years of delays

As sad as it is to admit, doing all of the pre skip sagas is pretty much impossible
Assuming it maintains popularity for that long (fingers crossed) filming/release takes too long
By the time they got to Sabaody the actors would probably be in their mid 30’s if not older. The timeline just wouldn’t add up
