One of Ju Peter's relative being a Holy Knight just proves that Ju Peter in the past was most likely also a former Holy Knight.

Also the Elders are not past their prime, their immortality most liekly keeps them in their prime.

Immortality doesn't mean eternal youth.
They are old now, so due to being immortal they won't loose power anymore. But they still are not the same level as their prime selfs.
