Itachi and Kisame are basically the average Uchiha and seven swordsman of the mist, since the others are all dead, with Kisame not knowing about Sasuke at that point in time.
Kisame should know about Orocohimarus and Itachis situation, we know the Akatsuki had a meeting about it
And Kisame was in the Akatsuki before even Itachi. And wrt Orochimarus statement,why are we ignoring the context of him having lost his arms?
And no, literally the entire Akatsuki would beat Jiraiya obviously, but mobilizing the entire Akatsuki could only be done by Pain or Obito, and even then it wouldn't be easy

We actually saw Luffy get up back up and use G5 again in Wano, and he was more exhausted and hurt there than he was against Kizaru
Plus he also wasn't glued to the floor against Lucci or the Gorosei
That thing only happened with Kizaru specifically because the plot needed him to stay down or he'd have killed the vibe that Saturn's entrance was setting up
