What do you mean he isn't interested in fighting Katakuri? How else would they settle it without fighting?
I'm also not sure why you're comparing a crew where everyone is half siblings to a crew that believes in meritocracy and survival for the fittest. Any normal person would feel more comfortable killing a random crew mate over their own siblings.

It's like a magic trick.
A fighting style is facilitated by means, not defined by them. Jiu Jitsu and Judo use all the same body parts and share most techniques, but they're different styles. When Jinbe uses his hands or water it's Karate, but it's not considered Karate when Arlong uses his hands or water. Brooke and Zoro both use swords, but one is Shimotsuki kenjutsu and the other is fencing (even with the legendary Shimotsuki body and sword, it still was fencing with Ryuma's corpse).
Sanji has strong kicks, so he facilitates an aerial style by kicking off. Dofy has a DF that suspends him, so he uses an aerial style by stringing along. Etc.
