Even if you think zoro is weaker than smoothie why can't you think that oda would just give zoro a power up to defeat her? Luffy was not stronger than kata but he fought him anyway.
Or do you think zoro and sanji need a power up against these two?

Cracker was a high diff fight for Luffy with G4 and Nami's help, and Smoothie is implied to be at least as strong.

Wings weren't ready to win against that calibre of opponent yet.

Considering Katakuri was Luffy's big fight, it stands to reason Wings would have fought Oven and Daifuku.
