People have been talking about Gaban being relevant in the story since we learned his name. As soon as people figured out the Gold -> Silver -> Copper name scheme actually

And then with the Oden flashback a lot of people assumed he’d show up at some point in Wano

If you go back you’ll see people making theories about Gaban possibly appearing in nearly every arc post timeskip

I'm very sure Sanji will get a good way with Gaban.
Unlike to Loki and Luffy(im so hyped for this duo), I can see great moments with Sanji and Gaban.

Currently matchup-wise, it very much looks like they would be matched up against Dorry/Broggy but doesn't really feel like a King/Queen or a Kaku/Jyabura type matchup. Comes across more like a sparing match to get them used to CoC.

Seen folks make an argument for Kiringham/Sommers but with all due respect they're simply not strong enough to be arc opponents for Zoro or Sanji even more so with the Holy Knight related CoC reveal from Gaban last chapter which just further disqualifies them. Plus, as crazy as it might sound I expect both to at least be able to match old legends like Ray and Gaban by the end of this arc (i.e if Shanks is the bar Oda's set for Luffy this arc, then I think Old Gaban is the standard that Oda's set for the wings this arc, might be overthinking things from Gaban's scolding of Zoro but feel like Oda's set a standard that those two are supposed to hit with Gaban)

So yh, I think there's a legitimate chance we might see Gorosei matchups this arc or the very next in the case that Elbaf becomes a segway type into another arc in the same way Water 7 was to Enies Lobby.

I feel like Dory and Brogy may be practice for Zoro and Sanji to master hurting immortals before having to fight Gorosei in the last act of this arc because Oda has drilled it into us that immortals with CoC are a different type of monster. And let’s be honest, Gunkimu is not an arc villain. Shes more of a damsel right now due to her connection with Brook.
