Cracker has no role besides fighting Luffy so ofc he won't show anything else, and Jack has a regular Zoan which doesn't have versatility.
Mythical zoans, Logias and Paramecias will keep showing new things until the very end, look at Doffy, or even Kizaru who iirc, only showed clones last arc. We still haven't seen Sommers and Killingham all out.

You're just one of the people coping because Oda didn't really do much with Sommers and Killingham, even though that will apply to any villain who isn't fighting Luffy now.
