Let's discuss the things we know about it so we don't say "it's impossible to know because nobody explained it!"
I'll be adding to this with a list.
1. Doflamingo stated an awakening is when the fruit starts affecting things other than the user's own body.
2. We have at least 4 examples of awakened paramecia users. Doflamingo, Katakuri, Trafalgar, and Eustass.
3. We have at least 9 examples of awakened zoan users. The Five Elder Stars, Killingham, Lucci, Kaku, and Luffy, and 14 if we include the Jailer Beasts.
4. The Jailer Beasts were the first example of when an awakened zoan fruit overwhelms a person's mind.
So far, everything works with what Doflamingo said originally, except the normal zoans. That is, Doflamingo, Katakuri, Trafalgar, Eustass, and Luffy, have all shown the ability to affect things other than their own bodies using an awakened ability. Luffy is the exception among the awakened zoans and is able to use an ability on the surrounding environment because he's not a normal zoan. Mythic zoans seem capable of influencing the environment in a special way compared to paramecia users because Doflamingo, Katakuri, Law, and Eustass dont affect their opponent when they touch them, but Luffy does.
That gives a good picture of how the paramecia, normal zoan, and mythic zoans change with an awakening. The normal zoan users don't really change their surroundings, but paramecia and mythic zoan users can to different degrees.
This leaves the only true speculations to the logia class which has never had a showcase yet for awakening. However, we should assume that they will affect things other than their own body as Doflamingo stated rather than assuming a random ability upgrade happens.
If you want MY thoughts on what happens with a logia, then we are about to discuss a particular change that transcends what the other awakenings have done. The reason the logia awakening is special is because all the other fruits try to change the surrounding environment (except the normal zoans), but the thing they can't do is combine their bodies with it once they've done that. If a logia affects something other than his body, then he can combine his body with that thing. That causes a strange upgrade and I'm not sure what happens. A lot of different things could happen.
Something I suspect could happen is the Logia Defense mechanism being brought back. The problem with armament haki and logia users previously was they could find the real body because the entire thing was their body. For example, if Smoker turns into smoke, the entire smoke cloud is his body. If you use armament haki, then you can punch any part of it and it will hit him. However, what happens when he starts combining things other than his own body in the smoke? Then, it's a confusing mess again to find out which parts are the logia and which parts he just added to himself.
