The art looks pretty great, I just dunno about getting into a series where some guy can end every fight with a single hit, or where every antagonist is just a gag fight for him. Doesn't sound like it'd hold my interest for too long.

It's a battle junkies wet dream, manga is made for people who love powerscaling tbh. I think you'll like it, the interactions between characters not named Saitama is what makes it great. Saitama is just there for the gags, you need a laugh, Saitama is there.
First season in the anime is all Saitama and then the story shifts completely. At one point Saitama isn't even the MC anymore it's an antagonist called Garou. If that doesn't peak your interest then nothing can convince you.
