Hard choice.

If I had to choose I would split the era between Pre-Zou and Post-Zou. FI, PH and Dressrosa are cool but they are just not on the level of the cooking from zou until today. Whole Cake had an amazing bitter sweat flavor, the reverie was stunning, Wano was epic and so grounded in symbolism, Egghead was very fresh and conflict heavy and Elbaph just feels so good to read.
