Luffy knew he had CoC since the Time Skip and it took him 4 sagas to infuse AdvCoC, it's taken Zoro 1 Arc in 1 Saga after knowning he even has CoC to infuse/use AdvCoc....

It took him one to figure out infusion. But unlike Luffy and Sanji, it took him awhile to use it consistently.

Luffy did it immediately after learning from Kaido and it seems like Sanji is about to use it immediately after locking in.
