Because narratively it makes sense. If Queen knows Judge/Germa because of their history with Vegapunk (considering the Numbers are from Punk Hazard), then its also likely Queen is familiar with Sanji's suit. If that's the case, we could see some immense growth from Sanji if the suit is either nullified or if Queen knows how to push Sanji to unlock his potential as a Germa son, like his brothers have.

Barring their eccentric personalities and love for women almost match, its the matchup to me that has made most sense in a while. And we know if Sanji takes on Queen, Zoro likely will take on King, and there's a decent reason to believe that King was the reason the Shimotsuki were massacred in Ringo. King might recognize Zoro for having a pretty similar look to Ushimaru.
Nooo....Aokiji had a connection with Luffy's grandpa. Did he fight Luffy ? Nope....he sparred him. Queen has no reason to fight Judge's son. Only reason hed interact to him is tell him stuff about Judge.

You have to have a reason for Sanji vs Queen to occur. This chapter actually further shows that it wont happen since. Queen has a connection with his father.

I'm sorry but your reasoning doesn't make sense. Aokiji had more of a connection to Robin than anything, and Aokiji wasn't really a villain.

This is really the first instance where a villain seems to have history with a protagonist or their family, outside of Vergo/Law, which ended up in them fighting.
