Apoo was beat by a none name attack that Zoro had to stop his cutting power short so he wouldn't cut the antidote, instead knocking it out of Apoo's clothes. Zoro did that an instant one attack.

Apoo only was able to get up thanks to Marco, who accidentally healed him, when he used his healing flames on everybody on the ground floor. Even then, Apoo's body was shaking just stand and was so weak he was about to be taken out by Brook before Drake chopped on him.
