It’s possible it’s been shown slightly. Remember Katakuri couldn’t figure out what triggered puddings shutdown on the wedding he just saw the shut down. Which doesn’t track with being able to see entire conversations a few chapters prior.

True. He should have been able to sense Sanji's reaction to Pudding's eye, since it was the main signal for the assassination plot. Nice to think he couldn't predict Sanji's action, and failed to hit him, because he dodged. Kinda cool to think about it, but, as things stands, it's just assumption.
Luffy "cleared his mind" in order for Enel not to be able to use Mantra on him. So, CoO have some counters already adressed.

DJ has never shown any ranged fire attacks. Thus Zoro's fire counter is useless. If Zoro does want to counter DJ, he'll need to cut off Sanji's entire leg. And we all know his swords will shatter before that ever happens.

Yeah I don’t think it’s “advanced CoO” just Sanji may know a way to hide himself from basic observation haki since he was running hiding stealing and fighting for two years straight

I dont particularly care who looks or bad or not, anime is an adaption and as such based on interpretation, sometimes purposely wrong to extend stuff to fit the the 1 episode 1 chapter pacing since Enies Lobby.
Animated adaptation is as valid as a source, as the original material.
Because the animated adaptation is NOT the original material.
"Canon", as people talk like simply being "the original source" it's not the only meaning for it, as there are lots of debates at the academic world about what it means a "canon literature".
You don't see people cashing Marvel's Thor just because it doesn't strictly follow norse mythology. do you? Is Marvel's Thor something "non-canon"?
Adaptation can come in many forms, and, aside from the cases where the adaptation is merely done to promote the original source, like many animes do, for instance, any adaptation is its own "canon" material.
"Filler" is just as exceptional case of sideline stuff that have 0 impact on the story whatsoever.
Saying a character did something in the anime, but should not be considerer "canon", just because it wasn't shown in the manga, is a misconception about the purpose of an adaptation.

Oda writes the story and draws it, everything else is an interpretation and adaptation of that. Whatever Oda can or cant do is irrelevant, what he does is relevant.
He has no influence on the story of movies, he bas no hand in the anime.
What you are saying is factually wrong, read up the definition of canon.
What you are referring to is if a source material gets adaptations in different mediums ( quite often for light novels for example, witb anime and manga adaptation) or if the writer of a source material is actively involved as showrunner or even head writer of an adaptation, Oda has nothing to do with the anime, as he himself pointed out several times.

Nah Zoro can't counter DJ.
DJ itself just adds heat to Sanji's attacks. It aint so much that Sanji throws fire but more so that his legs become really heated. And when coated in Haki it becomes a different thing on its own.

Now if Sanji could throw ranged fire kicks then yea Zoro could cut them
