That's the million dollar question. Last chapter Dorry and Brogy chopping their heads off (killing each other) made them return to the original state.
I feel like the chapter doesn't show the results of the DR giants that Zoro and the giants attack and that's what's causing confusion.
Since the spoiler dirn't say those giants returned to the original state I interpreted as it didn't work. But I could be wrong.
Maybe they were just surprised Chopper was able to without needed to kill them.
