Where are the Dragons? Like we know they are extinct now so when did that happen? And why aren’t they shown anywhere in the mural or text?

The Celestial dragons call themselves “dragons” after the dragons that existed. Caeser implies people have been trying to manufacture artificial dragons for the WG for centuries. Ryuma’s story was also about dragons.
yes there’s that shadowy bird thing that’s breathing fire, maybe that’s the dragon representation on the mural but then why is it shadowy? We know what dragons looked like, why would the dragon on the mural be shadowed?
