Are you happy about the way he has been written or not ? What characterization and character development do you think that he should have gone through during and after the timeskip ?

More emotional moments with Zoro showing his more sensible side and more heart to heart moments with his crewmates and/or Tashigi would have been good.

Also him actually becoming more mature and wiser instead of becoming dumber, and also him having rivals who are also aiming for the WSS title.

More rivals for WSS gunning for Mihawk would have done nicely. In fact that alone would have given his story some meat.
Hell, turn one of the swordsman supernova into a guy that not only wants the One Piece but also the WSS title and boom, money

When Luffy got captured in Wano Oda should’ve leaned more into Zoro being the vice captain, or maybe he hangs with the samurai and they rally behind him

There is no reason to change anything to his character. He simply needed to be exposed more in Wano to his family history or other samurais.. No reason to not see him pay respect to ryuma's grave or see Onimaru's reaction to Zoro after the raid...
