Yeah it's really that simple. CoC likely can manifest stuff into things via will transfer and guys like Mihawk and Zoro just use their hardening like crazy and specifically train for it, so that their swords do not even get a scratch in the blade, hence they manifest an indestructible blade after tons of battles.

Others don't have it because they are hybrids: Shanks and Roger using kamusaris, using non touching hakiblasts, Ray having ID CoA aswell, thus prolly using a hybrid style aswell. Fuji and WB are enchanting their swords with DF abilities besides haki and so on.
They all are not conventional swordsman in that sense, thus they do not manifest that indestructible feature, cause they don't really have to if they also heavily rely on non touching hakiblasts and other, additonal sources of power.

Gaban has ACoC and FS, that is definitely an advantage over Oden. He's also the official nr 3 of the crew.

What is the function of FS, if Gabum will just see Oden 1 shotted him? Surrendering early like he did against Luffy and Zoro?

If you play that game, Kaido knocked Lolden down with a nameless hakiless attack. Oda was just hiding Kaido's abilities for later.

Between Woden and FS user Kaido, Woden still managed to land the first hit and won.
