He's not really a character who's meant to be super cool and tough like Zoro or Akainu for example, he's more soft in some ways and is a little more relatable for the average reader. So given that, I'm not surprised most of his opponents are a little less serious than the people Zoro fights.
Still, Sanji himself looks pretty badass at the end of most fights. Even against Wadatsumi, who's an absolute joke of a character, he still had a cool one liner after finishing him.
But if you really want him to defeat a cooler character, then you can hope Oda has him fight DR Brogy this arc or Mars or Lafitte later on
