Powers & Abilities Do you think we will see any more "Special" Paramecia users?

Back in Whole Cake we had Katakuri and his Mochi-Mochi fruit, the first and only known "Special" Paramecia type fruit. but originally it was stated to be a Logia type fruit before it was changed to being a "Special" Paramecia.

Do you think we will see anymore "Special" Paramecia users? or will Katakuri be the only one?

There is no such thing as a Category of DFs called "Special",
It's just a Description for Kata's DF, just like Law's DF was called "Ultimate", and Enel's was called "Invincible" and BB's was called "Unique", and Loki's was called "Legendary", They aren't Categories, just a way to highlight how certain DFs stand out from Rest for various reasons.
There are many DFs we can describe as Special or Unique or Invincible or Legendary ... etc

Special paramecia was only the way to make up for the error (Katakuri's fruit was originally a Logia).

I doubt there are going to be others.

I hope so. It being a sub-class makes it seem like there should be others, but it could be the only one. I would hope Oda brings at least one other rather than relying on just mythical zoans.

Katakuri's DF was a conceptual mistake within a specific context (enemies with food-themed abilities)... I don't it'll ever happen again, but who knows what passes in Oda's mind.

I have no issue whatsoever with Special Paramecia.

In fact, there are probably a few that could be reclassified as such, and a few more interesting ones that can be added.

As is often the case with Oda, the problem is with the execution of the concept, not the concept itself.
