1.Luffy was nowhere near in the same state as he was on Egghead (here he still has enough energy to stay facing Kaidou having a convo, on Egghead he is flat on his back unable to move, can barely speak, and his pupils black).
2.Luffy barely used G5 at this point, this entire scene is stressing how long the battle has been going, Luffy even references that dying takes a lot of energy. Not Gear 5. This has NOTHING to do with G5. Luffy had not taken Gear 5 to its max timer, it was his overall body which was exhausted from the long battle and literal death.
Against Kizaru Luffy fought in Gear 5 for much longer than he did by this point of the Kaidou fight, most of it being offpanel. He simply maxed out G5's time limit. Once you max out the time limit that's it, there's no going back to it without replenishing. That's the entire point of a drawback.
What he did in the Kaidou fight was pump his heart back because his heart stopped earlier in the fight and dying exhausted him. This was never a retcon, it was always a situational thing where he prematurely got kicked out of G5 due to overall exhaustion.
