Okay, I'm probably jumping the gun on this. But, I'm following a hunch, and I feel like I'm possibly onto something that Oda's being a bit subtle about. So, we'll see how well or poorly this ends up aging.
In this latest chapter, Luffy comments on how Imu's fire isn't even that hot, and Brook and Franky both comment that Gunko's ice cube doesn't really feel all that cold.

So, I think this could be the reason. The longer you stay on Elbaph the less you are able to feel extreme heat or cold.
Why would this be the case? Um....I dunno. But, it could have something to do with the giant tree, Yggdrasil. Yggdrasil might have some special property that makes you less sensitive to extreme heat or cold the longer you're around it. Due to Yggdrasil itself probably having to be more resistant to heat or cold, just due to the extreme difference in temperature among it's 3 biomes. The upper Astral/Heaven Realm is probably pretty hot from being the closest to the sun. The middle Sun Realm is pretty mild and consistent. The the lower Underworld Realm is freezing cold. For the Giant Tree to survive these 3 different environments all year long, it probably needs to be pretty hearty. So, being around the tree might make people more like this tree. Possibly. In theory.

Now, I don't think the Strawhats are going to go completely numb. I think this is more like....how you sometimes see a fat guy in winter walking around in shorts. He CAN still FEEL how cold it is. He's just less sensitive and more insulated against temperature variations.

Now, in theory, if this was the case, we should have seen a few cases where the Giants themselves have shown to be less sensitive to heat and cold in the past. And I think there are a few possible places where we have seen this. With Saul on Ohara, Oars on Thriller Bark, and Galleila Giants on Punk Hazard.

Now, all of these guys were frozen. And if Giants are supposed to be less sensitive to extreme cold than most people, you would think that would be impossible. But, just because you're less sensitive, doesn't mean you're immune. And these could be three examples of the Giants getting cocky about not being affected by the ice and cold as much, and ending up frozen because of it. They were all frozen BECAUSE they were less sensitive to cold, and they underestimated it. And in Saul's case specifically, he was frozen AND burned by the fire of Ohara, and was able to survive both extreme temperatures. And as we saw with Saul, he was able to thaw himself out with no real lasting harm done to him. So, the Giants MIGHT have some natural resistance to cold, it's just not a total immunity.
Now, what would that mean for the Strawhats going forward? It seems like loss of temperature sensitivity has been shown to have really backfired on the Giants. So, does that mean the Strawhats are all going to be weaker, if they have some permanent loss of sensitivity?
Well...I think it's actually going to be seen as a power-up, by the end of the story. Because they COULD be going to some really cold or hot places in the future. This WOULD be seen as a bad thing usually, thus Arnote's warning, but for the Strawhat's specific destined journey, it's actually going to end up being a boon.
For one, we still have to deal with The Man Marked By Flames. Now, it's possible he's just been BURNED by flames. But, it's also equally as possible that TMMBF could have some sort of fire-related power. Probably not fire directly, since that's Sabo's Fruit. But, he could have some fiery mythical zoan or something fire-adjacent. If the Strawhats have to fight him, being less sensitive to heat or flames could actually be a boon!
But, also, more importantly, I think this will prepare the Strawhats for their eventual journey into the Underworld!
...One way or another.
Most people would probably expect any sort of literal Underworld to be hot and fiery and lava-filled. But, I think there's actually been a lot of hints that the One Piece's Underworld is actually cold and icy. Brook's and V Nusjuro's Underworld and Death-themed ice attacks seem to hint at this. I think if we end up travelling down to the center of the planet, it'll be a lot colder than most people are expecting.

Even though, Enel didn't seem to have any problem with the Moon being cold during his cover story. Or breathing, for that matter. Something weird's going on with that Moon!
Here's how I currently envision a cross-section of the One Piece World:

The One Piece World is hollowed out from the First World's Underground Mining Operation for the Forbidden Sun which was originally in the center of the World. The former inhabitants of the World above, the Dragons, have been imprisoned in ice in the frozen core of the planet. The reason why Imu using the Mother Flame and Uranos on rebellious Islands causes the sea level to rise due to creating Holes in the Ocean is because every blast is causing the icy core of the planet to melt a little bit more. As the core of the planet melts, the additional water makes the sea level of the planet rise on the surface. Imu is trying to kill the Dragons who are imprisoned in the Icy Core of the planet, before they can wake up and reclaim their World from the Humans, who are alien invaders to this world. Sidenote: The Moon is actually the original core of the planet, and once Luffy frees the Dragons, the Moon will likely have to be put back INTO the core of the planet to keep it stable. The entire planet will LITERALLY be split in half in order to free the Dragons and put the Moon back into the hollow core of the planet. The World is a giant Pokeball, and we need to free the creatures trapped inside. While also replacing them with something of similar mass, like the Moon, so that the entire planet doesn't collapse in upon itself. *PHEW* That's a quick summary, anyway, you can read more about all this in the links above.
So, yeah, I think the Strawhat's numbness to cold and fire will actually be a kind of power-up, that's getting them ready for the crazy journey they have ahead of them. The Strawhats are probably going to be journeying into the frozen core of the planet. And if they want to survive that experience, being less sensitive to the cold will actually help them out in the final leg of their journey.
...Or I'm just crazy, one of the two. But, if I'm even close, it's possible that the Strawhats being less sensitive to extreme temperatures could actually help them later on in their journey. But, we probably won't know until around the time we reach Laugh Tale for sure. Unless all of this is what Scopper wants to tell the Strawhats once Elbaph is safe again.
