As someone who has played all of the games, pre Bloodborne significantly more focus went into the levels/world design than the bosses, it’s only Bloodborne (and kind of its DLC tbh) where the bosses and their mechanics start to get more focused on.
In Demon’s Souls bosses take 1-3 attempts but you have the ENTIRE LEVEL as a runback. It’s the opposite design philosophy of Elden Ring/DS3/Sekiro where there’s a save point right outside a boss room but you may be stuck on the boss itself for a few hours.
DS1 vs DS2 is more about which game has better levels/combat/exploration/atmosphere/enemies/etc than about the bosses because both are pretty mid.
Imagine you replay ds1 now
You kill O&S and reach halfpoint
Now you have to deal with lame archives scripted death and run from bf to Seath, and r1 him like a brainless maniac
Run through tomb of giants on nokia flashlight 🤡 to fight another hit and run brainless boss
Deal with the janky ghosts of new londo, 4kings are dope no complaints there
Then go through demon ruins 🤡 fight asylum demon for 10th time🤡 centipede bum🤡 run through lost from database izalith and lose last brain cells on bed of aids 🤡
All that to parry Gwyn 3 times and kill him 🤡
Complete dogshit second half
Ds2 is consistent and enjoyable throughout for the most part, it’s a much better experience overall
Builds have more variety, countless weapons that can be infused, better fashion, better mapping, endless routing to the game
