If you are playing a card game, do you really show all your tricks or your ace in the sleeve to either your opponents or even your allies ? While he may have joined the Beast Pirates I doubt that Apoo is really fully loyal to Kaido and I think that it was rather a mean for him to better survive or reach his goals and he may need at keep at least one trick hidden to stay alive should the BP turn on him somehow.

It's very unlikely Bege ever showed this transformation to the BMP before the Tea Party, and also he hid the fact that his ships had paddles and was able of going on land to them.
