yes...if Luffy forces, he can turn back but for some reason that didn't happen in egghead...and he didn't turn back after defeating Kaido..unless there is some reason, it is inconsistent and Oda never bothers to explore anyways...

In the first place, he didn't turn into old man after defeating Kaido and went unconscious and this old man thing got introduced in egghead...he will again turn into oldman as per Oda's convenience...
