Luffy vs Katakuri is the best.
Despite being a fan who had been caught up since Dressrosa, I felt like I had not actually known Luffy until that fight. The subtle characterization there was amazing.
I'll admit, maybe Luffy wakes up, but I'm now convinced that he wont be the ultimate solution here. And I feel like it would be a bit of an stretch or a waste to give him yet another power-up so soon after all of the other ones he's had.
